Just in time for Thanksgiving - ha, ha (and you can print this out so you don't get flour and yuck all over your keyboard)
First you have to get a box of Pie Crust Mix -
(I like Pillsbury - but what ever) so you don't have to worry about the crust and you don't have to make a major mess . . . .
Then you'll need these:
- 2 Cups real pumpkin (Libby's - or like - careful - NOT pumpkin pie mix)
- 2 Eggs
- 1 Teaspoon ground ginger
- 1/2 Teaspoon cinnamon
- 1/2 teaspoon salt
- 1 Cup sugar
- 1 1/2 Cups of milk
Preheat oven to 425 and prepare the pie crust according to directions
Put the pumpkin into a bowl. Beat the eggs separately and then add to the pumpkin. Then sprinkle in the spices, salt, sugar and the milk.
Mix together well.
Pour into the crust and then sprinkle with a little extra cinnamon on top.
Bake in the 425 for 10 minutes and then lower oven to 350 for about another 30 minutes.
Pie is done when the pumpkin does not stick to the knife that you jab in the middle.
